Parathas with Sweet Potato filling

Sweet potato is nutritionally rich vegetable and is often ignored. It’s a great source of Vitamin A, B6 and D. It also contains substantial amounts of potassium, carotenoids and iron. People feel its sweet so tend to use it in only sweets which limits its use. Lightly spiced and adding lemon to it can make it suitable for savory dishes.

Today I made parathas with sweet potato stuffing. Boil sweet potato, peel, add finely cut green chillies, mint and coriander, juice of lime, salt. Stuff in parathas and make. To lower the fat used, cook paratha on both sides without adding any oil, add a tsp of ghee as you would in a chapatti. This I served with tangy kimchi style cabbage pickle and tomato sauce. Ghee reduces cravings so its good to have a couple of tsps./day!
